This simple fresh grape tomato sauce is perfect for any weather. If there was a word for fresher than fresh, this tomato sauce would be it. Bright red, grape or cherry tomatoes cooked until burst open to create a juicy, creamy, sauce that comes together in minutes.

A big reason for creating this recipe is because of the surplus of grape tomatoes that can be left over if you have plants.  I have recently started getting into growing vegetables and herbs, and I’m loving it!  So before all those tomatoes go bad, this is the perfect way to use them.

Another benefit is that you can freeze this sauce in case you make a lot and cannot eat it all right away.

Red Beet Pesto Ravioli

No surprise, we’re sharing heart-shaped ravioli for the impending holiday. Valentine’s Day, when everything is about L-O-V-E. Actually one of my favorite days of the year. As if the shape of these pasta pockets aren’t enough, they’re stuffed with red beet pesto, too. Bleeding heart raviolis I might call them…. but only when noone’s listening because Matt didn’t even laugh when I said that out loud. Can’t win ‘em all!

Crispy Kale Pizza

Vegan Crispy Kale Grandma-Style Pizza by Pasta-based. Made in a cookie sheet, this rectangular pizza is topped with crispy kale, homemade cashew ricotta, vegan mozzarella, grape tomatoes, mushrooms, and kalamata olives.

We wanted to try a new pizza recipe because the Superbowl is this weekend and my plans include sitting there stuffing my face with food. I’ll probably take one, maybe two, glances at the game. Also, by “glances” I mean that when I come up for air I may accidentally see what’s on the screen.
