Alright so today I’m going to go in a little bit of a different direction. Somewhere other than food. You see, being vegan is not just about what you eat, it’s about your lifestyle too. There are changes you can make in your life beyond what you eat to show compassion for animals, the earth, and your health. For example, purchasing cruelty-free products is a step in the right direction.

What We Ate In A Day: 1/2

It’s day two of the What We Ate In A Day series in celebration of Veganuary (click here to read day one).

Whether it’s something on the menu that keeps you coming back, the variety of options, the smells and flavors, or the convenience – most people have their go-to restaurants and lunch spots. After we starting eating plant-based, it took us a little bit of time to find restaurants with great options. We had to re-learn what to look for on a menu and how to order items we enjoy.

What We Ate In A Day: 1/1

Matt and I have been eating a plant-based diet for almost two years now. We watched Cowspiracy, a documentary that addresses the effects of animal agriculture on the environment, and decided that we needed to make a change.

We ate animal products for over 25 years so we know, first-hand, how hard it can be to go from eating animal products to vegan overnight. We were pretty determined after watching Cowspiracy so we tried our best from the beginning, but there was definitely a learning curve.

Italian Spinach Pinwheels

This recipe for vegan spinach pinwheels is made with garlicky, sautéed spinach and gooey vegan mozzarella. Rolled in a homemade pasta dough, this recipe is inspired by the spinach pinwheels I used to get at the local pizzeria.

After college, I spent some time working at the local neighborhood liquor store. The job had its ups and downs but there was one highlight that I could always look forward to. During my lunch break, I would run to the pizzeria across the street and order myself a slice of pizza and a spinach pinwheel. Piping hot, gooey mozzarella cheese and garlicky spinach wrapped in fresh, soft pizza dough and baked in a giant authentic pizza oven. Mmmmmm… it was the most simple and satisfying lunch.
