Easy Vegan Orzo Pasta Salad (with Tofu Feta)

Orzo Salad – a quintessential summer salad. I mean, what’s the point of a summer BBQ if you’re not going to have some side salads? Do it right. Picture this: charred corn, watermelon, and an ice-cold beverage. With this orzo salad, you’ll be chillin’ at the picnic table like a pro.

We actually stole half of this easy vegan orzo salad recipe from Matt’s mom but then we added our own little twist by mixing it up with Vegan Tofu Feta. Mmmm child – you do not want to skip out on adding that.

Tossed in a dijon mustard vinaigrette with a medley of vegetables including, my favorite, kalamata olives, and this bangin’ tofu feta, this orzo salad will make your mouth water and your friends will be screaming at you for the recipe. (Okay, well hopefully they won’t scream at you but you get what I mean).

You can probably make it with quinoa instead of orzo but we haven’t tried it that way yet. You can probably add whatever medley of vegetables that you like too. Maybe even add some chickpeas! Mix it up, make it your own. My only suggestion is that you don’t skip the tofu feta because it’s goooood… real good.

  • Cucumbers
  • Red onion
  • Chickpeas
  • Roasted almonds, walnuts, or other nuts
  • Sunflower seeds or pumpkin seeds
  • Raisins or dried cranberries
  • Fresh pomegranate seeds
  • Mandarin oranges
  • Corn
  • Avocado
  • Mushrooms
  • Red peppers
  • Sun-dried Tomatoes
  • Fresh spinach
  • Carrots

Ingredients
  • 1 lb orzo pasta
  • 14 oz homemade tofu feta
  • 1 green bell pepper (diced)
  • 3/4 cup kalamata olives (quartered)
  • 1 cup grape tomatoes (quartered)
  • 3 large basil leaves (chopped)
  • 1 celery stalk (diced)
Dijon Mustard Vinaigrette
  • 3 tbsp lemon juice
  • 4 tbsp olive oil
  • 1 tsp dijon mustard
  • 1 clove fresh garlic (minced)
  • 1/4 tsp black pepper
  • 1/8 tsp salt
Instructions
  1. Keep in mind, you will need to prepare the homemade tofu feta a couple hours in advance so that the flavors marinate completely into the tofu. It's worth it! Highly recommended for this recipe.

  2. Cook orzo according to package directions. Drain and set aside.

  3. Meanwhile, prepare vegetables.

  4. In a small bowl, add Dijon Mustard Vinaigrette ingredients and whisk until combined.

  5. In a large bowl, add cooked orzo, prepared vegetables, homemade tofu feta, and dijon mustard vinaigrette. Mix well until combined.
