What We Ate In A Day: 1/6

We’re almost through a week of ‘What We Ate In A Day’ posts. I hope you enjoyed reading a little more about our daily lives and learned something about veganism and eating plant-based.

Here’s what we ate today:

BREAKFAST

We had bagels with sun-dried tomato cream cheese again. We also updated our blog with this recipe! You can find out how to make it here.

LUNCH

We were running around doing errands today so we stopped in for a quick lunch at Even Stevens.

Matt got the ‘Hummazing Vegan’ – roasted red pepper hummus, slow roasted tomato spread, avocado, tomatoes, cucumbers, red onion, arugula, house vin, wheat ciabatta. I ordered the Jackfruit Torta – jackfruit carnitas, pepitas, avocado, salsa morita, radish, lettuce, pickled onions, house vin, sweet bun. We also got some tater tots on the side.

DINNER

I was planning on having leftover Pasta Fagioli but Matt came home with Gardein Crispy Tenders from the store. These nuggets are sooo yummy with some BBQ sauce. We added a side of steamed broccoli, drizzled in lemon juice and sprinkled with hot red pepper flakes.
