Maybe we all have memories of gray winter days, flurries of snow dancing in the air outside the window, the birds are nesting to keep warm and every so often a pipe bangs in the walls before warm air rushes through the vent. It’s so quiet and peaceful. You pull a soft sweater out from the bottom drawer, put on the fuzziest socks you have, and wrap your fingers around a warm mug filled with coffee.
January. Time to bust out that soup pot – the biggest one you have – because it’s cold, and dreary, and it’s pitch black at 5pm. When I step off the train from my work commute, all I want is to come home, put on a good pair of sweatpants and some fuzzy socks, and sit on the couch with a big ol’ bowl of soup.

It’s been one week of our Veganuary What We Ate In A Day Series. I hope you learned something from the posts because we have. We learned that leftovers are key, in any diet. We love making double batches of food so we can have our meals pre-made and not have to think about anything other than heating it up or adding a side of vegetables.

We’re almost through a week of ‘What We Ate In A Day’ posts. I hope you enjoyed reading a little more about our daily lives and learned something about veganism and eating plant-based.
Here’s what we ate today:
BREAKFAST
We make this Vegan Sun-dried Tomato Cream Cheese whenever we are craving bagels. Every once in a while, we’ll get a baker’s dozen of bagels from our local bagel shop and throw them in the freezer. This way, we have plenty of bagels for whenever we need a quick, filling breakfast.

It’s the weeeeekend! Matt and I usually spend our days off hanging out with each other. We really value each others’ company and we enjoy doing a lot of the same things.
We often spend some time talking about things we hear throughout our week regarding our lifestyle. People have so many opinions and they are rarely afraid to tell us what they think about veganism. We never boast or act entitled about anything, we never argue and we actually never even start the conversation, but sometimes people are just say the silliest things and it can get disheartening.
