It’s 4th of July weekend! We put together a round-up of all our favorite recipes to help you celebrate the occasion with. Sliders, pasta salad, and cupcakes – oh my! What a great weekend this is going to be.
1. Vegan Tempeh Sliders
Bake or grill the homemade vegan tempeh patty and serve on toasted slider buns. Then, spread on some basil pesto and homemade tomato sauce.
With a topping of caramelized onions and mushrooms, these grilled tempeh sliders make a delicious and nutritious meal. We used our stovetop grill pan for some and baked the rest but, with grilling season coming up and Memorial Day just around the corner, we can only imagine how PERFECT these would taste using an outdoor grill.
2. Vegan Strawberry Shortcake Mason Jars
It’s easy to make these Vegan Strawberry Shortcakes. Make three layers: Vanilla Cupcake, Coconut Whipped Cream, and Strawberry Chia Filling – then layer it up again until it fills up the mason jar. Our jars were 8 oz. and we were able to get about 12 jars filled. We topped them with blueberries to add a 4th of July festive touch, too!
3. Vegan Whipped Cream
Vegan, creamy, and fluffy whipped cream. Made with coconut cream, powdered sugar, and vanilla extract.
4. Vegan Jackfruit Buffalo Dip
We added lots of buffalo sauce to give this recipe for Vegan Jackfruit Buffalo Dip an amazing spicy kick. We mixed in diced celery for some crunch AND a can of pulled young JACKFRUIT to add texture and nutrients. Layered on top of our homemade stretchy, gooey vegan mozzarella and baked to perfection, you’ve got a classic vegan appetizer to bring to whatever party that awaits – sure to be a crowd pleaser!
5. Vegan Jalapeno Poppers
An easy, cheesy, spicy appetizer. Fresh jumbo jalapeños stuffed with vegan ricotta cheese, freshly chopped red onion, and scratch-made vegan sausage crumbles.
6. Vegan Spinach Pinwheels
Cheesy, Garlicky, Italian Spinach Pinwheels. Pizza dough deliciously rolled with Vegan Mozzarella and Sautéed Spinach.
6. Vegan Chocolate Chip Cookies
The Best Vegan Chocolate Chip Cookies! These cookies are made with coconut oil. The coconut oil gives them a slight coconut flavor and that makes me feel a little tropical which is much needed when you’re landlocked in Colorado on a hot summer day
7. Vegan Orzo Salad with Tofu Feta
Orzo Salad – a quintessential summer salad. I mean, what’s the point of a summer BBQ if you’re not going to have some side salads? Do it right. Picture this: charred corn, watermelon, and an ice-cold beverage. With this orzo salad, you’ll be chillin’ at the picnic table like a pro.
6. Vegan Tofu Feta
Delicious, tangy, cheesy, EASY Vegan Tofu Feta using a marinade of garlic, oil, miso, lemon juice, nutritional yeast, and a medley of dried herbs.
8. Vegan Vanilla Bean Cupcakes
These cupcakes contain no eggs, no dairy, and the batter comes together in minutes. They are so quick and easy to make. Add some delicious vegan strawberry buttercream frosting on top, and you’re golden.
